Waukesha County Technical College has been training people for successful careers in Culinary Arts since 1971 and is accredited by the American Culinary Federation. The campus is located in the beautiful lake country area of Waukesha, Wisconsin, USA.
Today, to be a competitive chef/manager, one needs to have both technical cooking
skills and business management knowledge. The two-year Associate Degree
Culinary Management Program is specially designed to do just that. Within the program, you will start with the basics of classical French cuisine and blend in the latest contemporary culinary techniques and food trends. Business course work will concentrate on profitable fiscal management of a commercial kitchen to include purchasing, budget planning and analysis of financial reports. Human resource management courses will develop your leadership skills, honing your skills in communication, motivating your staff and team building training. All courses are designed to prepare you for the exciting field of kitchen management in a restaurant, hotel, private club or institutional food service operation.
As a student in our ACF Culinary Apprenticeship Program, you will be involved with all phases of basic and advanced food preparation and theory instruction. The program meets on Mondays and follows the regular semester schedule. Total hours for completion is 720 hours of formal course work. In addition, the apprentice must complete 6,240 hours of on-the-job experience as outlined in the guidelines established by the Wisconsin Department of Workforce Development, Division of Apprenticeship and Training.
WCTC offers educational travel opportunities through joint programs with colleges abroad, European hospitality and culinary study tours, small lab sizes, usually only 12-18 students per lab, excellent credit transfer opportunities to four-year colleges and universities, three kitchen labs, a demonstration kitchen, and a full multi-service training restaurant.
Once you have finished your education at WCTC, you will be ready to start your career. You can work locally or travel the world as you take the job responsibilities as in these and other locations: hotels, motels or motor inns, resorts, bed and breakfasts, parks, camps, casinos, restaurants, private clubs, airlines, cruise ships, caterers, convention centers, bars/taverns, food service in hospitals, schools/colleges and assisted living facilities, food and equipment supplies, and many, many more!
