California Sushi Academy are for beginners and experts alike. Our school's primary focus is hands-on training. You need not have any prior cooking experience. We will assist you in developing all fundamental knowledge and skills necessary in becoming a sushi chef.

In the past it has been solely a Japanese right to become a sushi chef, but we would like to remove these limits and through the glory of Japanese food, create a deeper understanding of the background and history of this food for all the people of the world. "Cooking is a way of self-expression. If your heart is immature, there is no seasoning or fancy plate that you can use to disguise this. The reason is because a human being with emotions is all-consuming."

Working With Confidence After Graduation
The boom of low calorie Japanese food has found a permanent home in American life. Within this home, the beauty of sushi dishes as well as the wealth of materials used in their creation has received an overwhelming amount of popularity. Despite this fact, there is a great lack in the number of well-trained sushi chefs due to the tightening of immigration laws and the sudden increase in Japanese restaurants across the nation. American restaurants and hotel chains interested in new menu ideas have also indicated a need for properly trained sushi chefs. The curriculum and staff at California Sushi Academy are dedicated to preparing our students for jobs such as these.
Our Recognition
As the first Vocational Training School for Sushi Chefs, we have been the focus of nationwide television shows, radio programs, newspapers and magazines. Our unique and broad course of study has received worldwide recognition. Our hope is to realize a new type of sushi boom across America with our students properly handing down the spirit of Japanese culture.
Courses
Our academy was born in September of 1998 as the first registered vocational school for the specialty of training sushi chefs in the state of California. At our academy, veteran sushi chefs teach small groups of people a curriculum which we believe can satisfy all of our students. From handling a Japanese knife and creating dishes from a first rate Japanese restaurant menu to making delicious and beautiful plates of sushi, our broad range of courses encompasses all. We teach not only about the culture of food in Japan, but also about nutrition and proper sanitation procedures so that our students may graduate and enter the work force with confidence. From a complete beginner to working chefs, everyone can learn from our varied curriculum.
Basic
The Basic Sushi Chef Course consists of 126 hours of instruction in the fundamentals of Japanese foods including yakimono (grilling), teriyaki, sumomono (marinating in rice vinegar), and nimono (simmering) and introduction to sushi and sashimi.
Professional
The Professional Sushi Chef Course consists of 144 hours of instruction mainly in sushi and sashimi, presentation of plates and eduction in restaurant management.
Special Classes
Design your own curriculum. These classes focus on educating restaurant professionals - chefs and/or restaurant management - about the dynamics of integrating Japanese-influenced cuisine into current operations.
