Executive Chef - Extended Care

Position Summary: 
Plans, directs and controls all aspects of Food and Nutrition production operations in an extended care facility in New Jersey.

Executive Chef Skill sets:
  • Provide food production oversight to all production areas.
  • Evaluate and write menus for all areas within the nutritional and budget requirements.
  • Write recipes that meet the objectives of account.
  • Develop food specifications that reflect end use and cost effectiveness.
  • Provide leadership and training to the entire production team.
  • Analysis financial reports and develop action plans to correct and improve performance.
  • Develop and implement systems to monitor food cost, waste and labor utilization.
  • Liaison between Dining Services and Production.
  • Liaison between Healthcare Resident Services and Production.
  • Interact with Independent, Assisted and Skilled Nursing populations, being sensitive to the specific needs of each on a daily basis.
  • Coordinate the production to each service area listed above, while delivering excellence to each area.
  • Ability to be creative and adjust to changing market conditions.
  • Ability to interact with other departments in a professional and effective manner.
  • Be a team player that plans community events.
  • Computer proficient with EXCEL, WORD and email.

Experience:
5 years of experience. Extended Care, Hotel or Fine Dining Restaurant preferred (as Chef). The facility is a culturally diversified facility not leaning towards any one culture or religion. Prefer candidate with experience in Italian cooking, Jewish cooking, old-fashioned American comfort food, etc.
