St. Louis native Paul Berglund is featured on the cover of Wednesday's New York Times Dining section in a story about the resurgence of Scandinavian cuisine in the Twin Cities.
Berglund, 35, is executive chef of Minneapolis' The Bachelor Farmer, where he has "given Scandinavian food a much-needed adrenaline shot," the Times says, with dishes like roasted rutabagas and reinterpreted cinnamon rolls, pickled Lake Erie perch and housemade rye toast.
