charles has been in the food industry since he was twelve. he started line cooking in his father's cafeteria and has been at it ever since. when we met, he was cooking lunch and bartending at a fine dining restaurant downtown. since then, he moved to executive chef at the same restaurant and did a lot to raise the quality of food in the kitchen there. he is now running an industrial cafeteria with a much bigger kitchen and very different kind of food.
talia has never worked in a restaurant. she loves to cook and host and realizes doing it professionally will be very different. currently she works in a cubicle. she's looking to get a taste of professional food service with some part time work and will be assisting charles with catering jobs in the near future. she has a business administration degree.
we both dream of owning a restaurant and creating the concept from the ground up. charles will run the kitchen and talia will run the business. we are learning all we can right now about things that we do not know and are beginning to build our business plan. we are hoping to connect with people who can give us advice for the rough road we know that we face.
