I recently interened for a hospital in San Antonio, Texas. I found there sanitation standards to be adequate and there food service workers were monitored closly. The Dietitian on staff was super attentive on sanitation issues. This particular hospital was did not have a trauma unit.

You might have seen this FDA study already, but if not go to http://vm.cfsan.fda.gov/~dms/retrsk.html

It deals a little bit with institutional food safety compliance.
